Kitchens


Recycling is collected at all kitchens located in the food service facilities operated by University Housing. These include
  • Carson Dining Center
  • H.P. Barnhart Dining Hall
  • LLC Dux Bistro
  • Hamilton Kitchen
  • Bean Catering

The staff at each kitchen is responsible for getting material to recycling sites. These sites are then picked up directly by the UO Zero Waste Program van crews.

KITCHENS RECYCLING SITE CONTAINERS & SIGNS
Below is a list of container types and former and current signage used in the kitchens for recycling collection. Please see the individual kitchen for specifics:

CARSON DINING CENTER

  • dine-in buffet-style dining center
  • two kitchens prepare food for both in-house meals and other campus food venues and events
  • dining center serves approximately 1200 students daily
  • kitchen staff stages recycling in kitchen then deposits materials into main site serviced by the UO Zero Waste Program

The main kitchen recycling sites are located on the north side of the complex off 13 th Street :

    1. 55-gallon barrels in loading dock storage room - Glass, Metal/Plastic/Cartons, Plastic Film/Bags and Paper
    2. On loading dock - Corrugated Cardboard


H.P. BARNHART DINING HALL

  • smaller of two dine-in buffet-style dining centers
  • serves approximately 800 students daily
  • kitchen staff deposits recycling into main site serviced by the UO Zero Waste Program

The kitchen recycling sites are located on the south side of the complex:

    1. 55-gallon barrels inside fencing - Glass, Metal/Plastic/Cartons, Plastic Film/Bags and Paper
    2. Metal cage inside fencing - Corrugated Cardboard
    3. In Parking lot - additional Corrugated Cardboad

LLC Dux Bistro

    • a la carte dining venue, including cafe
    • serves approximately 3,000 students daily
    • kitchen staff deposits recycling into main site serviced by the UO Zero Waste Program

The kitchen recycling site is located on the south side of the complex:

  • 55-gallon barrels in Steel Enclosures - Glass, Metals/Plastic/Cartons, Plastic Film/Bags and Paper
  • Across alley in exterior site – Corrugated Cardboard

 

HAMILTON KITCHEN

  • central kitchen for four food service areas within the Hamilton complex:
    • Grab'N'Go – a convenience store selling pre-packaged and some hot and cold foods prepared on site
    • Common Grounds – a full-service cafe with some a la carte items
    • Fire'N'Spice Grill –a grill for a variety of made-on the spot, hot foods
    • Big Mouth Burrito – walk-up venue
  • serves 5,500 students daily
  • public recycling accessible from all food service areas

    1. Loading dock near kitchen exit - Paper
    2. Off loading dock near service gate - Glass, Metals/Plastic/Cartons, Plastic Film/Bags and Paper
    3. Off-loading dock - Corrugated Cardboard

BEAN CATERING

  • prepares food for campus events, box lunches and some on-campus dining halls
  • staff deposits recycling into kitchen recycling site serviced by the UO Zero Waste Program

The kitchen recycling sites are:

    1. Inside kitchen service entrance - Glass, Metal/Plastic/Cartons and Paper
    2. Loading dock - Corrugated Cardboard


KITCHEN PRESENTATIONS
A recycling presentation or refresher is an educational tool that benefits the staff groups working in UO Housing kitchens. Presentations are conducted at the beginning of each academic year and on an as needed basis. Kitchen staff groups gain a good understanding so that recycling becomes easy and convenient. By conducting the presentations, the Housing Recycling Coordinator finds out about ways in which recycling collection and service can be improved through kitchen staff input.
